never tasted this good.
When people ask me how I do it, my answer is
that "it's easy." Vegetarian food is healthy, it's fresh,
and it makes me feel great.
You see, eating a plant-based diet helps me
be energetic and athletic. My skin, my head full of hair, and my body
thank me for it, every single day.
Of course, it wasn't always this easy.
Nearly 20 years ago, when I first became a
vegetarian, I wasn't living in a vegetarian household. There were
fewer vegetarian restaurants, and meat substitutes hardly even existed.
So, it's true, back then it took a little while
to understand how to put dishes together. And I had to learn how to
explain to people that I wasn't trying to offend them when I didn't
want meat on my plate. Instead, it was about respecting my body, recognizing
my nutritional needs, and, yes, caring about the welfare of the planet
and of animals. When I put it like that, it didn't seem so radical
after all.
Today, I'm an avid cyclist, a snowboarder,
and a professional writer. I'm happy I've chosen the path that I did.
I've always been happy to be a vegetarian, and I wouldn't have it
any other way.
